3 sweet crackers toppings

These three toppings are moreish, quick and low in fibre – just add white crackers

ONE CRACKER

INGREDIENTS

1 tbsp ricotta

1 tsp seedless strawberry jam

1g finely chopped mint

 

1 tbsp peanut butter

½ a banana

Shaved milk chocolate

 

1 tbsp ricotta

1 skinless peach (fresh or canned)

2g honey

METHOD

Ricotta, seedless jam and mint

Finely chop the mint and mix into the ricotta

Spread the ricotta onto the white cracker and add a dollop of seedless strawberry jam

 

Peanut butter, banana and shaved chocolate

Spread the peanut butter on the cracker, slice the banana and place on top

Shave the milk chocolate to finish  

 

Ricotta, peach and drizzled honey

Spread the ricotta onto the white cracker, add skinless peaches (canned or fresh) and drizzle honey

Tip: For a quick, low-fibre lunch, use up your leftover ricotta with roasted beetroot (recipe here)
