SERVES ONE

1 slice white farmhouse bread (no seeds)

1 free range egg room temperature

Unsalted butter for spreading (optional)

Marmite® for spreading

Ground black pepper

Marmite on toast for a low residue breakfast

METHOD

  • Fill a medium size saucepan with water (or a larger saucepan if cooking more than one egg).

  • Bring to just under boiling point, turn down to a simmer and add the vinegar.

  • Place the bread in the toaster until nice and crispy.

  • Place the egg in a small cup.

  • Swirl the simmering water with a whisk to create a whirlpool in the centre, then gently drop the egg into the pan.

  • Turn the heat up and when it starts bubbling again, turn it back down to a low simmer.

  • Poach the egg for 3 minutes – the egg will rise to the surface when done.

  • Remove from the pan with a slotted spoon and place on kitchen paper to soak up excess water.

  • Spread the toast with the butter (optional)  followed by Marmite®.

  • Top with the poached egg and sprinkle with a little ground black pepper.

  • Serve immediately.
